The “sella” (saddle) is obtained by processing the loin of adult pigs, with the part of the back fat attached. Salted and flavored, it requires a long seasoning and its preparation lasts on average about 8 months. Characterized by an intense aroma and a spicy and flavored taste that make it a versatile and innovative product in the culinary field.

Obtained from pigs raised in the wild in a sustainable and ethical way. This type of breeding has as a direct consequence products of the highest quality.

Being a micro farm, which raises a small amount of animals, the availability of the products is very limited. The goal is to go back to raising animals “as it once was” in an ethical and sustainable way, focusing on the well-being of the animal while respecting the environment in which it lives. This type of farming results in products of the highest quality. The animal is raised in the wild and fed mainly on acorns, no antibiotics or GMOs are used, the animal therefore follows its natural and slow pace of growth.

Nutritional values: energy value 215 Kcal, 899 KJ, fats 6.2g of which saturates 2.9g, carbohydrates <0.5g of which sugars <0.5g, proteins 35g, salt 1.5g.
