Typical Norcia salami, it takes its name from the shape that recalls the testicles of the mule. Made by hand-bagging the finely minced lean pork (shoulder, loin and ham) into the natural casing, with a lard of fat in the center that aromatizes the meat, enhancing its flavor. It is then tied by hand and left to mature.
