Shape: soap, typical name given to Tuscan marzolini, technically we can define it ovoid and irregular.
Ouside: very thin rind with the presence of raised dots due to the impression of the die, the color that can vary from white to pale straw yellow, the intensity of the color will vary depending on the days of maturation.
Inside: the paste is compact and slightly rubbery and moist, creamy white in color, with uniform pinhead sized holes.
Smell: fresh lactic hints such as butter and yogurt are clearly perceived on the nose, but also vegetable smells of fresh grass.
Taste and aroma: in the mouth it has a soluble consistency, and the sensations felt in the nose are confirmed even if of low intensity and persistence

The sweet and delicate flavor is very pleasant and not very persistent.
